Caciocavallo semi-mature is one of the oldest cheese in South of Italy. Made with cow milk, it has been matured for at least 3 up to 4 months. It has an unusual shape of a pear and its flavor is tasty and very aromatic, just a little bit spicy. It is perfect whether as starter, matched with jams or for some gourmet recipes
